Boeuf Bourguignon
I am definitely not going all “Julie and Julia” on you. Mrs. Child would never use a packet to make her Boeuf Bourguignon. But, a packet is what I have, in addition to frozen Costco steak, carrots, fresh herbs and bacon. So in the dish they go! I’m serving this British-style with peas and potatoes and a hunk of French bread. As my Grandfather sings whenever he’s making something remotely French: Voulez vous coucher avec moi ce soir?

Boeuf Bourguignon
Ingredients:
1 Packet Colman’s Beef Bourguignon mix
A little under 2 cups – half water, half red wine
1-2 Chopped carrots
½ Onion chopped
Chopped fresh parsley
Chopped fresh thyme
3 cloves chopped garlic
1 lb Stew beef, cubed
3 slices smoked bacon, chopped
Preheat oven to 350 degrees.
Place the beef, onions, carrots, garlic, bacon and herbs into a casserole dish.
Mix the contents of the Colman’s packet with the water/wine mixture and pour over the beef and vegetables.
Cover and cook for 1-2 hours, until the beef is tender.

Lasagna
I really love lasagna. What there not to love? Gorgeous layers of cheese, meat, pasta...sorry, I think I zoned out for a bit there. I was gifted a cookbook with simple American recipes by my friend Bryan a few years ago when I had just started to cook. I was really wary of cooking Italian or anything "American" back then, but this book changed that. So, thanks Bryan.
Lasagna is generally made with some sort of ground meat. Of course, one could avoid the meat altogether and make it with veggies and cheese. I have yet to try that version out. Maybe when I finally take the plunge and turn vegetarian...
I'm using ground chicken in this recipe. I've used ground turkey before so anything works, really.
Ingredients (Serves 8, very easily)
1lb Ground chicken/meat
6 Garlic cloves, minced
1 Onion -finely chopped
1 Tspn Italian Seasoning
Salt to taste
Ricotta Cheese - about 1/2 of a 150z container (I didn't really measure. this depends on how much you put in. )- 1.5 cup
Mozarella - 4-6oz (Again, didn't measure but had an 8oz packet on hand)- Maybe 1.5 cups
Parmesean Cheese - 1/2 cup
Lasagna pasta - about 12 (cook according to directions on box)
Olive Oil - 1tbspn
Marinara (or any Pizza/Tomato) Sauce - 12 oz (give or take; I used store-bought)
Optional : Button Mushrooms (I had to finish a carton before it rotted)
Method:
1. Heat up the olive oil in a pan. To it add the onions and saute for about 3 mins. Add the garlic and italian seasoning. Saute until onions are translucent. Ensure you don't let the garlic burn. If adding mushrooms, add at this point. Also add salt.
2. To the above, add the minced meat. Saute until cooked and begins to brown.
3. Add tomato sauce (marinara) to the pan and bring to a boil. You sauce is now done.
To assemble lasagna, use an appropriate baking utensil and
(i) thin layer of the sauce.
(ii) layer of pasta noodles
(iii) ricotta and mozarella on top of noodles.
(iv) sauce on top of the cheeses
(v) back to (ii) and repeat.
(vi) the last layer should be a layer of pasta noodles. top this off with a generous layer of pamesean cheese.
Baking instructions:
Set oven to 425 and pre-heat for about 5 minutes. Cover your work of layered art and cook for 10 minutes. Then remove the covering and bake for another 10 mins or until the top is a nice golden brown.
That's it! Serve with salad and garlic bread!

AnglophileLV’s authentic Beef and Beer Pie

For the past two weeks I’ve been in England enjoying the people, the architecture, the shopping—and the food. Oh yes, the food. Even though the Brits are leaning away from their traditional fare (trading bubble and squeak for a surprising obsession with risotto), I am still quite taken with Bangers and mash, roasted game birds, sausages, and yes, Meat Pies. The meat pie is essentially beef, pork or chicken cooked with onions, carrots and mushrooms to form a thick brown chunky gravy which is then glopped into a puff pastry pie crust and baked to a golden flaky delicious buttery….droool… oh god it’s good. Now that I’m back in the cholesterol-conscious U.S., I’ve been going into withdrawals. Here is my recipe for a traditional London Meat Pie – best enjoyed with copious amounts of beer.

Flakey Crust:
2 cups Flour
1 cup butter
1tsp salt
6 drops lemon juice
Cold water
1. Mix flour and salt.
2. Then mix with butter and lemon, with enough cold water to bind the ingredients together (otherwise it gets very crumbly).
3. Roll out lengthwise and fold over 3 times. Roll out again, and fold 3 times again. Repeat this around 4 times (it’s supposed to help with making it flakey). Now your dough is ready to use.
Filling:
1 lb beef, chopped up to be bite sized (whatever cut is cheapest)
½ onion, chopped
1 russet potato, chopped
2 carrots, chopped small
1 leek chopped
4 cremini mushrooms, chopped
4 sprigs thyme
2 cloves garlic
2 Tb Worcestershire sauce
2 beef bouillon cubes
3-4 Tb flour, mixed with
½ cup beer
1 egg yolk mixed with 1tb water
Salt and pepper to taste
1. Brown beef with onion, garlic and thyme in a large pot.
2. Add potatoes, carrots, leek, mushrooms, beef bouillon cubes and Worcestershire sauce.
3. Pour in enough water to barely cover the potatoes.
4. Cover and simmer 45 minutes (or until potatoes are fork-tender).
5. Add flour/beer mixture and stir until mixture boils and thickens to a thick gravy. Add pepper – you may not need salt since the bouillon is quite salty already.
6. Let filling cool until lukewarm.
7. Roll out pastry and put into a deep dish pie plate –OR- do like I did, and make little individual meat pies out of small loaf pans. Roll out the pastry and press the tops of the loaf pans into it, outlining your pie tops. Press the rest of the pastry into the pan(s) to form the lower crust, and top with the other pastry you just cut out.
8. Bake at 400 degrees for 30 minutes.
9. Remove pie(s) and brush the tops with the egg wash.
10. Continue baking for about 15 minutes, or until crust is golden.
