Asian Crunchy Salad

Dressing:
Hot and Sweet chilli garlic sauce (1 tbspn )
Sriracha sauce (just a smidgen)
Vinegar (3 tspns or more)
Sugar (2-4 tspns or more!)

* those are vague measurements, so adjust according to taste. the key are white vinegar and sugar.

Salad:
Carrots (grated or julienne)
Lettuce (I used red romaine from my CSA box)
Sugar Snap peas (I substituted snow peas)
Red Cabbage if you have some (i didn't)
Spring onions
tomatoes
Red Onion
Crunchy Noodles (you can get these now at Panda Express)
Grilled Chicken (optional), could also substitute fried/grilled tofu.

Method
In a salad bowl prepare salad dressing according to taste (this will be bright red in color). Layer the veggies on top of this and finish off with the crunchy egg/chinese noodles. Toss just before serving.

SO SO good.

Strawberry and Banana Lassi

It finally feels like summer here in Southern California. I live in Los Angeles on the top most floor facing the North-west (I'm guessing. I'm horrible with directions). But what I do know is that the apartment gets REALLY hot in the late afternoon-evening. And when it's hot, you drink tender coconut water to keep cool and when you don't have access to fresh coconut water, you get tanked on lassis! This is a sweet drink as opposed to the spicy version I posted earlier.

Makes about 3 glasses
Ingredients
1 cup of yoghurt (I always use plain, but I suppose you could use flavored ones)
1/2 Lb of strawberries (give or take) (remove the green bits)
1-1.5 bananas
1/2 cup water
about 8 ice cubes
2-4 tbspn of sugar depending on how sweet or tangy you like your drink.

Method

1. In your blender (ESSENTIAL GADGET FOR THE SUMMER), add the roughly chopped bananas, strawberries, yoghurt, water and blend (chop, puree, liquefy, mix, whatever as long as the fruits disperse into the yoghurt). Then do a taste test. Add sugar accordingly and also put in ice cubes and blend.

Pour into glass and ENJOY!

Big Soft Ginger Cookies

Despite my protestations, my mother still thinks these taste just like gingerbread men and wants to squeeze white icing all over them- but ginger cookies do not have to be limited to the Holidays! These are delicious just as they are.

Big Soft Ginger Cookies

Ingredients

2 1/4 cups all-purpose flour
3 teaspoons ground ginger
1 teaspoon baking soda
2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon salt
3 Tablespoons Chopped crystallized ginger
3/4 cup margarine, softened
1 cup white sugar
1 egg
1 tablespoon water
1/4 cup molasses2+ tablespoons white sugar (to coat cookies)

Directions

1. Preheat oven to 350 degrees F (175 degrees C). Sift together the flour, ginger, baking soda, cinnamon, cloves, and salt. Set aside.

2. In a large bowl, cream together the margarine and 1 cup sugar until light and fluffy. Beat in the egg, then stir in the water and molasses. Gradually stir the sifted ingredients into the molasses mixture. Shape dough into walnut sized balls, and roll them in the remaining 2 tablespoons of sugar. Place the cookies 2 inches apart onto an ungreased cookie sheet, and flatten slightly.

3. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. Store in an airtight container.
